As an extremely difficult 2020 already drew to a close, the food industry is still expecting more challenges and trends in 2021. TastyTrip Gastronomic Forum is now presented with a renewed and dynamic look, which shows the focus on the development, value and future of Chinese cuisine. It will also discuss the use of local ingredients, as well as in-depth sessions on humanity and sustainability. This year’s forum will be joined by a new panelist, Yin Hao, executive chef at King’s Joy, Michelin three-starred restaurants. In addition, internationally renowned celebrity chefs from top restaurants around the world will be taking part via the internet for a unique and exciting cross-country conversation.

Food as Language: Restaurant Industry East Meets West
The interchanges between Chinese cuisine and Western cuisine have never been more prominent these days. The notion of “East meets West” is not new, but in China, fusion cuisine is being reinvented and is becoming increasingly the norm among numerous high-end restaurants. Many young chefs are still cooking with Chinese ingredients and flavours but sipping on inspirations from Western culinary techniques and presentations. This new fusion trend is perhaps the next clearest influence on the global dining scene, much like molecular cuisine and Nordic cuisine which once reshaped the food world. To capture this hotspot, TastyTrip invites a number of young celebrity chefs to share their views. They are Miles Pundsack-Poe, head chef of the popular restaurant Ensue in Shenzhen, Talib Hudda, celebrated head chef of Refer in Beijing.
Humanity and Sustainability in Restaurant Industry
With humanity and sustainability trends high on the global agenda, how would the restaurant industry rethink its sustainable practices? TastyTrip invites Gary Yin from Beijing’s three-starred Michelin restaurant King’s Joy, also the first-ever recipient of Michelin’s “Green Star” in China, to talk about “A Sustainable Vegetarian Future”.
Zoom Talk: What Will Fine Dining Industry Look Like After Covid?
Also on this session, international celebrity chefs who are ranked among top 10 public speakers will give observations and perspectives on the food and beverage industry in the post-pandemic era through online talk.
